Mushroom masala, Ven Pongal with Simple Moongdal sambar..!

Hello Dears..

Wishing a lovely day to all..!

Today i bring for you Spicy Mushroom masala and traditional ven pongal..! Try and Enjoy!


1. Mushroom masala:

This is one of my MIL's favourite. As she is a vegetarian, she orders this masala whenever we go to restaurant.

I made this for the first time, came out really well.




Ingredients:

1. Button mushrooms(Cleaned and chopped) - 1 cup,
2. Onion - Small 2 chopped finely,
3. Tomato - 1 chopped finely,
4. Green chilly - 1 Slit lengthwise,
5. Curry leaves - 1 string,
6. Ginger-garlic paste - 1 tsp,
7. Turmeric powder - 1 tsp,
8. Red chilly powder - 1 tsp,
9. Coriander powder - 1/2 tsp,
10. Garam masala powder - 1/2 tsp,
11. Salt - as needed,
12. Freshly ground pepper - 1 tsp,
13. Oil - for frying,
14. Cilantro for garnish.

For crushing:

1. Cinnamon - 1 stick,
2. Cloves - 2,
3. Fennel seeds/saunf - 1/2 tsp.

How to make this?

1. Heat oil in kadai, add the crushed spices, and then add the onions, green chilly, curry leaves, ginger-garlic paste and saute well till the onions turn soft.
2. Now add the tomatoes and saute well till they get mashed. Add the turmeric powder, salt, coriander powder, red chilly powder, garam masala, some pepper powder and saute well till the raw smell goes.
3. Add the mushrooms and saute well till the masala coats well, if the masala is too dry, add little water. Cover cook for 10min stirring in between to prevent burning.
4. Adjust taste, add some oil on top, keep cooking till the masala consistency is reached. If you want dry, cook till all the water evaporates and fry till golden brown.
5. Add the remaining pepper powder, mix well. Garnish with cilantro and serve.




Delicious mushroom masala is resdy to be relished with chappathi/roti/rice..! Enjoy!!

2. Ven pongal:

This is one of my favourite comfort breakfast/dinner. Delicious pepper+cumin flavour in dhal+rice mixture will taste divine with crunchy cashews in between.. Mmmm.. Enjoy!!:)




Ingredients:

1. Raw rice(Preferred)/any rice - 2 cups,
2. Split-Moong dhal/Paasi paruppu - 1 cup,
3. Milk - 1/2 cup,
4. Salt - as needed,
5. Ghee+Oil - 1/2 cup,
6. Cashews - 8,
7. Black peppercorns - 1 tsp,
8. Cumin seeds - 1 tsp,
9. Curry leaves - 2 strings,
10. Ginger - grated 2 tsp.



How to make this?

1. Pressure cook the rice with dhal, milk, salt and enough water for 3 whistles. Cool and mash them.
2. Crush the pepper and cumin seeds and keep aside.
3. Heat ghee+oil in kadai, roast the cashews till golden brown. Now add the crushed pepper+cumin and let them splutter, add the grated ginger, curry leaves and switch off the flame. (Lovely aroma will cover you fully.)
4. Now pour this in to the mashed dhal+rice mixture and mix well. If its too thick, add little more ghee/oil and mix well till it rolls out..


Yummmy pongal is ready to be enjoyed with simple moongdhal sambar/coconut chutney!!


3. Simple Moongdhal Sambar:

This is My Chithappa Ammachi's(Grandma) recipe, an easy sambar prepared in 15mins.. Good for idlis/dosas/pongal..! Try and enjoy! My hubby loves this so much, that he takes it with rice too..!


Ingredients:

1. Moong dhal - 1/2 cup,
2. Toor dhal 1/4 cup,
3. Beans, carrot, green peas - chopped together 1 cup,
3. Onion - 1 chopped finely,
4. Tomato big - 1 chopped finely,
5. Green chillies - 3 Slit lengthwise/or more as needed,
6. Curry leaves - 1 string,
7. Turmeric powder - 1 tsp,
8. Asefeotida powder - 1 tsp,
9. Salt - as needed,
10. Sambar powder - 1 tsp,
11. Red chilly powder - 1/2 tsp,
12. oil - for frying.

For seasoning:

1. Mustard seeds - 1 tsp,
2. Urad dhal - 1 tsp,
3. Cumin seeds - 1 tsp.

How to make this?

1. Heat oil in pressure cooker, add the seasoning let them splutter, add the asefeotida powder, green chilly, onions, curry leaves and saute till they turn soft.
2. Add the tomatoes and saute till they get mashed. Now add the veggies, salt, turmeric powder, chilly powder, sambar powder and the moong dhal + toor dhal and saute well for a min.
3. Add enough water for cooking and cover cook for 3 whistles. Cool and mash them well.
4. If needed, keep on flame and cook for right conisitency and adjust taste.


Delicious simple sambar ready..! Try & Enjoy!!:)

thanks for the comments dears..! @Chitra - Amount of water doesn't matter, as its pongal, we are ultimately going to mash them. I added approxmately, 5 cups of water with 1/2 cup milk.

Mushroom masala and venpongal looks beautiful..adding milk in pongal is new to me..if u add garlic in venpongal,it ll give u a nice taste and smell...the color of the mushroom masala is tempting me..i ll try it out :)
