Fall in Love(FIL) with Ghee Sweets this season.!

Now to the Festive part..! Here comes Deepavali in a month..! The Festive mood has started. So this season of FIL comes with love for pure ghee sweets..!

LOGO FOR THE EVENT:



I'm picking the most simple daily-use ingredients, as my aim is to make everyone participate and share their dish with love

FIL - An Event to fall in love with food and cooking. Merging both to give away a dish out of full love.

My idea here is to see the inner love and convert the interest and exploit the talent in giving the dish of most love, finally dedicate it to someone whom you love

What is this event about?

1. I will be giving each month a ‘simple ingredient’ used in daily cooking which falls in categories like veggies, fruits, meat, cereal & pulses, dairy products, spices, flour etc.
2. You have to take that ingredient and prepare a dish with the ingredient as main component, which turned out so well that you literally fell in love with it. It can be a dish someone prepared for you too, you try out the same and publish in your blog.
3. Choose a lovable person you would like to dedicate your most loved recipe and write a few pleasing lines on why you chose them.

Here comes some spicy delights for you!

1. Simple Chicken Briyani!

This is a quick easy style briyani with less spices, my MIL's recipe..! Try and enjoy eating!




Ingredients:

1. Basmati Rice - 2 cups (Soaked in water for 1/2anhr before cooking),
2. Chicken - 1/4 kg,
3. Onions - 2 Slice lengthwise finely,
4. Mint leaves - a small bunch,
5. Curry leaves - 1 string,
6. Tomato - 2 chop finely,
7. Green chillies - 4 slit lengthwise,
8. Ginger-garlic paste - 3 tsp,
9. Coconut paste - 2 tsp,
10. Raw Cashews - 6,
11. Turmeric powder - 2 tsp,
12. Salt - as needed,
13. 1/2 lemon juice
14. Ghee - 2 tsp,
15. Oil - 2 tsp,
16. Red chilly powder - 1 tsp,
17. Food colour(Saffron) - 1 pinch dissolved in a tsp milk,
18. Cilantro for garnish,
19. Bay leaves - 2.



For crushing:

1. Cinnamon - 1 stick,
2. Cloves - 2,
3. Cardomom - 1,
4. Fennel seeds - 1 tsp.

How to make this?

1. Heat oil and ghee in kadai, add the crushed spices and add the onions, ginger-garlic paste, green chillies, cashews, mint leaves, curry leaves, bay leaves and saute well.
2. Add the tomatoes and saute till mashed. Add the chicken pieces, salt, turmeric powder, red chilly powder and saute well till the chicken turn white on the outer side.
3. Add the coconut paste and saute well.
4. Add the soaked and strained rice and saute a min. Convert this on to a rice cooker.
5. Add 3 and 1/2 cups of water and lemon juice as needed. check taste and adjust salt.
6. Cover and cook till atmost done. Now open and add the milk dissolved food colour on the rice and cover cook till full done.
7. When ready covert to serving bowl by mixing the rice from bottom without breaking the rice. Garnish with cilantro.

Tastes excellent with chicken kuruma and onion raita..!


2. Crispy Gobi Manchurian!

This is a easy crispy snack and side dish loved by all. Try and enjoy!




Ingredients:

1. Cauliflower/Gobi - 1 cup of florets,
2. Ginger-garlic paste - 3 tsp,
3. Turmeric powder - 1 tsp,
4. Red chilly powder - 2 tsp,
5. Garam masala powder - 1 tsp,
6. Salt - as needed,
7. Corn flour powder - 3 tsp,
8. Curd - 2 tsp,
9. Ajinamoto - 1 pinch(Optional),
10. Red food colour - 2 pinch,
11. Lemon juice - 2 tsp,
12. Cilantro for garnish,
13. Oil - for frying.

How to make this?

1. Cook the gobi florets in water with salt for 15mins, strain and cool.
2. To the florets, add all the above ingredients except oil and cilantro.
3. Mix together well and keep refrigerated for 1 hour.
4. Heat oil in kadai, drop in the marinated florets little by little and fry them till golden reddish brown.
5. Garnish with cilantro and serve hot!

Tastes great with curd rice, any rice variety, as a starter!


3. Ulundhu thuvayal:

This is a delicious thuvayal can be had as a sidedish for curd rice! Try and enjoy!!:)




Ingredients:

1. Ulundhu(urad dhal) - 1/2 cup,
2. Grated coconuts - 1/2 cup,
3. Red dry chilly - 5,
4. Tamarind paste - a pinch,
5. Salt - as needed,
6. Oil - as needed.



How to make this?
1. Heat oil in kadai, add the red chilly and saute a min and take it out. Add the urad dhal and saute till golden brown and take it out. Add the coconut and saute a min and take it out.
2. Cool and grind in a blender with tamarind and salt. Adjust taste and convert to serving bowl.

Tastes excellent for curd rice/any kuzhambu rice/idli's and dosas

Hi Sanghi, you'd asked me about pictures. I upload pictures to an external website (flickr or photobucket). Then link that in my post. Bigger pictures is of course, one advantage. The other is you'll save space on blogger too, since pictures do take up big bytes.
